It would be great if, when I am editing the price per unit of a stock item within a PO or IR (because the price I have set in Breww is out of date), there could be a checkbox included on the editing window which, if selected, will update the price per unit of that stock item in the supplier settings so that I don’t have to do it manually myself!

Good news, this is now possible 
If you add a stock item to a purchase order or inventory receipt at a price different from the expected price for that supplier, Breww will ask if you would like to update the expected price going forward.
