it would be really great if a tag for maturation could be added. we currently require going from fermentation as a step to Maturation which has a lot of process steps and ingredients that are separate from fermentation.

We’ve added a new recipe stage category of “Post-fermentation” for you 
You can now create a recipe stage type of “Maturation” to use in your recipes. We opted for “Post-fermentation” instead so that if you had other stage types in the future, they could hopefully be sensibly grouped under this category without us needing to add new categories continually. This might also be a good place for a “Dry hopping” stage to live, for example.
