Allow setting an address for an uplift that differs from the customer's address

Hi People
I have question on uploading an address on an account that is just set up for private hire customers.
It has our Brewery address set up as delivery & billing which works for customers who collect from us & return back to us. We also have a service where we deliver the hire equipment to a venue & we would then need to collect after the venue usually a couple of days later.
The problem we have is when I do an uplift it only reverts back to our Brewery address & I need a rolling field where I can put in an individual customer address when needed. Please can you help.
