If I’m putting through a test order and test payment prior to launching a WooCommerce web shop (to see whether both Woo and Breww are syncing, etc) how do I ensure that the stock gets reallocated after I’ve done the test order? Do I just need to cancel the order in Breww/WooCommerce (depending on which setting I’ve got it on for fulfilling the order)?

Good question! There are a few possible things that could be impacted when this order comes into Breww.
If the order comes in without the delivery completed in Breww, then the only impact will be on the theoretical max stock figure for those products. Cancelling the order will then fix this.
If the order comes in with the delivery is completed, then you will need to go to the completed delivery in Breww and return those products to get the stock back into Breww. This would typically (unless the stock was already duty paid or was not duty eligible) have contributed to the duty return as well, so an adjustment may be required there.
