Beer has been racked as a particular product in error how would I go about transferring the current volumes to a different product alias.

If you sell two packaged products that use the same beer and container type, then it sounds like these should be set up as either an ‘Alias’ or ‘Derived at Packaging’ product. This would allow you to use the stock you have already packaged as the ‘standard’ product for the ‘alias’ or ‘derived at packaging’ product stock. Alternatively, if you have racked the wrong product, you may be able to reverse the racking action and rack the correct product (please see: Undo/correct batch errors).
